Sea & Smoke is Rhode Island’s premier wood fired catering company. We utilize age-old cooking techniques of slow smoking, grilling, and searing over open fires. Our on-site service offers a show in itself – with live fire cooking over our Santa Maria grill, and Custom Made Smoker.
At Sea & Smoke we create Coastally-Inspired Barbecue. This translates to fresh clams, mussels, crabs, and lobsters cooked over coals; smoked North Atlantic Salmon, Pt. Judith Tuna, and Block Island Swordfish; fresh, seasonal veggies from local farms. All cooked over 100% native hickory or hardwood charcoal. We source only high quality Duroc Pork, and Black Angus Beef.
We are a self-sufficient, mobile operation, and do not require electricity or other commodities to cook. We can bring our kitchen t to your party just about anywhere – and prepare your meal on-site!
About The Chef
A life-long Rhode Islander, Chef James has been working in the kitchen since he was fifteen. After graduating from Johnson & Wales University, he pursued a career in fine dining. Working in popular restaurants in Rhode Island, he learned the craft, and worked his way up the kitchen ranks; notably working as the Executive Sous Chef at The Boathouse, as well as serving as the Executive Chef of Preppy Pig BBQ, and KG Kitchen.
With Sea & Smoke, Chef James has brought together his years of technical experience, his passion for smoked foods, and his love of New England cuisine. His thoughtfully prepared dishes highlight the flavors of the season, with local ingredients, and the age-old method of wood fire cooking. James brings his standards of excellence and attention to detail to each and every event, no matter how big or small.
About The Rig
Our trailer was custom built for us in Houston, Texas by a company called Lone Star Grillz. It’s name is Nessie. Nessie is an offset cabinet smoker and Santa Maria grill, with two propane burners. We smoke with 100% hickory in the firebox. With this piece of equipment we are able to smoke, bake, sear, grill, boil, and saute – allowing us to bring a full meal to your table
